I have always loved guacamole and have noticed how much tastier it is fresh and homemade. One of my favourite Youtubers, Rachhloves, mentioned this great recipe which I tweaked slightly and made a single serving for students or young professionals like myself who are only cooking for one! (No shame in our solo game.)
I like to serve this on a piece of rye toast. Definitely dresses up the typical avocado toast!
Half of a ripe avocado (black skin and soft to touch), cubed
1 heaping tablespoon red onion, diced
1 heaping tablespoon tomato, diced
1/4 teaspoon sea salt (1.5 cracks with a sea salt mill)
1/4 teaspoon coarse grind black pepper (1.5 cracks with a pepper mill)
1/4 teaspoon minced garlic
1 slice rye toast or homemade tortilla chips, to serve
- Cut avocado in half around the pit. Pull two halves apart and slice avocado while still inside the skin in a cross-hatch pattern. Scoop out of skin with a tablespoon into a small bowl, making sure to scrape edges of skin to get all that tasty avocado out of there!
- Toss in red onion and tomato, top with sea salt, pepper, and garlic powder. Mash it up with a fork.
- Scoop onto rye toast or serve with healthy homemade tortilla chips and enjoy!
Tips:
-To save guac for later, mash in 1/4 tsp of lemon juice to avoid guac turning brown
-Store leftover onion, tomato, and avocado each in its own ziplock sandwich bag to lock in freshness
-Avoid avocado turning brown: get as much air out of ziplock bag before sealing or wrap tightly in plastic wrap
