Hi all,
I recently went to a great brunch place called Willie’s Cafe in London with a friend and sampled their legendary cinnamon oatmeal pancakes. While these aren’t nearly as decadent (unhealthy) as those, I put my own healthy spin on them and made these beauties. Using oatmeal over white flour really makes the pancakes more filling, meaning you don’t find yourself wondering “is it lunch already?!” in an hour. Read on for a great, quick breakfast fix:
Makes 4 pancakes
Ingredients
- 2 bananas
- 2 eggs
- ½ cup rolled oats
- 1 teaspoon cinnamon
- 1 teaspoon of vanilla
- Coconut oil to cook
- Pure maple syrup to serve
Directions
- Blend bananas, eggs, rolled oats, cinnamon and vanilla all up in a blender. (I took the blender off a couple times to shake it up while holding the lid until it was blended well.)
- Heat a non-stick pan over medium heat with about 2-3 teaspoons of coconut oil. Once coconut oil has melted, pour about 1/4 cup of batter from the blender into the pan. If its a big pan, you can make about 2 pancakes at a time. Cook until you see bubbles on the top of the pancakes and they are firm enough to flip. Flip over and cook other side, keeping a close eye as not to burn them. Continue with remaining batter.
- Serve hot with maple syrup and/or fruit of your choice such as berries and enjoy!
